Job Summary

To make a grand first impression upon arrival and solidify a memorable dining experience upon departure by courteously greeting guests with a smile and enthusiasm. Volunteer assistance and information whenever necessary and handling all requests in an expedient, professional manner. 

Job Responsibilities

  • Arrive to work on time, dressed in full uniform and wearing name tag.
  • Have pride in your apperance, uniform pressed, shoes cleaned and polished.  Neatly groomed observing personal hygiene; ladies hair pulled back, men clean-shaven.
  • Graciously greet guests at entrance, offering assitance with coats, packages, ect.  Seating them according to preference and or space availability, always wishing them a pleasant experience.
  • After seating guests, inform them of their server's name, and if busy, may proceed in taking guest's preliminary drink order.
  • Communicate with the servers on table turnover and at which time certain tables should be set for the correct number of people.
  • Attend the door and phone at all times.  If the hostess or receptionist needs to leave for any reason, the manager or supervisor on duty should be contacted.
  • Advise manager or supervisor of any complaints so they can be rectified immediately.

FOOD & BEVERAGE DIRECTOR - FULL TIME/SALARIED

Job Summary

The F&B Director will plan, organize, direct and coordinate the activities of all F&B staff  to include AM/PM Servers, Server Assistants (Bussers), Expediters, Bartenders and Hosts.  Reporting to the Resort Manager, he or she will be responsible for allocating the resources of the Food & Beverage division to ensure a quality and memorable experience for guests who patronize our signature dining room, lounge, poolside cabana, coffee/snack bar and room service. The F&B Director will work in conjunction with the Executive Chef and Conference Services Manager to ensure that group/banquet functions are executed according to group specifications and expectations.  He or she will also work closely with our Nutritionists and other departments within the Programs division to ensure that guest dietary needs are addressed, and that food-related activities and programs such as cooking demonstrations, tastings and meal-time lectures run smoothly and effectively.

Job Responsibilities

  • Select, supervise, delegate responsibility to and provide training for all staff. 
  • Meet regularly with and provide feedback to staff members to ensure that individual and departmental performance goals are being accomplished.

  • Prepare daily and weekly payroll sheets in addition to daily accounting procedures as required.
  • Review financial transactions and expenses in order to optimize operating efficiency and establish effective cost controls to insure budget limitations are not exceeded. Develop and implement processes and procedures to eliminate and prevent waste.
  • Estimate food service costs, purchase supplies and requisition goods from the storeroom to ensure that the department is always at optimum stock levels.
  • Schedule and participate in frequent departmental meetings and training sessions. Attend all required organizational meetings.
  • Meet weekly with Sales/Marketing to review BEO's for future banquets & special events.
  • Performs other job related duties and special projects as assigned.

Job Requirements

  • Bachelors Degree in Hospitality Management or a related field of study
  • Extensive knowledge of high-end Food & Beverage operations, to include menu development and  wine selection (knowledge of spa cuisine a plus)
  • A minimum of 3 years of F&B  Management experience in a senior role within a luxury hotel or resort
  • Up-to-date certifications for responsible alcohol service, safe food handling and sanitation
  • Valid driver’s license.
  • Strong knowledge of local labor laws and health codes.
  • Professional appearance, with exceptional verbal and written communication skills

  • Assists the server with the service to the table including water, coffee, iced tea, etc.
  • May also include, upon completion of training and excellent performance reviews, the responsibilities of a Runner, this includes running food and beverages to and from the bar and kitchen area
  • Communicate with the hostess on table turnover and at which time certain tables should be set and the correct number of people
  • Advise manager of any complaints so they can be rectified immediately.
  • Understand the telephone system, answer calls in a pleasant manner, responding to requests and transferring calls to the appropriate extension.  Take reservations and answer any questions on information made available to you.  Refer to the "Reservation Procedure Document" and the "Telephone Techniques Document."
  • Give guests constant pampered service and act as Host/Hostess in the dining room during manager's absence or request.
  • Solicit feedback from guests regarding meal, atmosphere,etc.
  • Observe all areas and department which have a direct effect on each guest's experience
  • Always wears the appropriate uniform as prescribed by policy and maintains personal cleanliness.
  • Ensures that the floors are swept or vacuumed and free of dirt and debris.
  • Works to prevent and eliminate waste. 

Job Requirements:

  • Set and re-set tables as needed, polish and wrap silverware, fill water, assist Servers with guest service and perform other food service related duties as needed. 
  • This position requires standing and walking 95% of the time, lifting up to 25 pounds, reaching, bending, pushing and pulling. 
  • Must have excellent customer service skills, able to anticipate guest needs and be able to work independently when needed. 
  • Must consistently demonstrate and project a professional guest oriented and friendly demeanor, and display excellent English language communication skills. 
  • Previous experience in a fine dining environment is highly desirable.
