Chocolate Cinnamon Decadence

Ingredients

  • 5 oz. soft butter
  • 4 T. cocoa powder
  • ½ T. cinnamon
  • 2 T. unbleached flour
  • ½ C. Fruit Sweet
  • ½ C. Fantasy Fudge
  • 1 t. vanilla extract
  • 3 large eggs, separated
  • 5 egg whites
  • ½ cup prune puree or unsweetened applesauce

Instructions

Preheat the oven to 350F. Lightly spray the bottom and sides of a 9-inch spring-form pan with cooking spray. Line the bottom of the pan with parchment paper. Have a baking pan ready that the spring form pan will fit into.
Whip the butter with a paddle attachment of a mixer. Gradually add in the cocoa powder, cinnamon, and flour. Beat well. Slowly pour in Fruit Sweet, fudge sauce, vanilla, and egg yokes, then puree.
In a separate bowl whip 8 egg whites to medium peaks. Fold the whites into a chocolate mixture. Pour into prepared spring-form pan. Place the spring-form pan into the baking pan and add water to the pan to reach halfway up the sides of the spring-form pan to make a water bath. Bake in the water bath for 20-30 minutes, or until a thin, firm crust forms on the top of the cake.
