Pastry Chef Kim Macy
Inspired by her mother’s cooking when she was a child, Kimberley Macy decided to pursue her passion for healthy, mindful cooking as a career. From the beginning, her goal has been to create timeless, classic cuisine with a healthy twist.
Kim graduated with honors from the Le Cordon Bleu Culinary Program at The Scottsdale Culinary Institute in Scottsdale, Arizona in 2004. As part of her training, she interned at Athletes Performance in Tempe, Arizona and then at Miraval Resort and Spa in Tucson, Arizona. Kim was asked to join the Culinary Team at Miraval on a permanent basis at the conclusion of her internship and worked in all areas of the kitchen including Garde Manger, Pantry, and Hotline. Soon realizing that her true passion was Pastries, for the past five years, Kim has managed the Pastry Department at Miraval.
Kim’s work has been showcased in several pieces of media including the Arizona Daily Star, Arizona Foothills Magazine and Shape Magazine. Kim also teaches two live cooking demonstrations a week for Miraval guests and has been a Repeat Guest Chef on four different occasions performing live cooking demonstrations for local morning shows on KOLD 13 and KGUN 9. Kim has also participated in a recent segment featuring Miraval, aired on the Tennis Channel’s “Fit to Hit”.
Kim is a very talented Pastry Chef creating and implementing savory and decadent low fat, low calorie pastries, breads, desserts, and other baked goods for the enjoyment of Miraval’s guests. While most of her demonstrations are focused on pastries, Kim also teaches classes on healthy soups, salads, appetizers, and entrees. These cooking demonstrations afford Kim the opportunity to interact with guests answering their questions about techniques, sharing information about gluten-free diets among others, and allowing her to share her passion for preparing healthy, mindful cuisine at home.
