Lemon Panna Cotta with Blueberry Compote

Everything taste better in the warm sunshine, enjoy a little taste of spring with lemons and berries in this delicious recipe.

Ingredients:
Panna Cotta

  • 8 C. 2% milk
  • 1 C. heavy cream
  • 1 C. granulated sugar
  • 16 sheets gelatin or 16 tsp powered gelatin bloomed in cold water
  • 1 vanilla bean
  • 1 tsp Lemon Extract

Blackberry Compote

  • 2 C. blackberries
  • 1/4 C. sugar
  • 1 tbsp Lemon Juice
  • 1/2 tbsp Cornstarch

Directions:
Panna Cotta
Heat milk, cream sugar and vanilla bean. Add in bloomed gelatin and remove from heat. Strain and add lemon extract. Pour into glasses and let set for 4 hours.

Blackberry Compote
Cook blackberries, Sugar and lemon juice in a saucepan. When boiling add cornstarcha dn remove from heat. Let cool.

Pour blackberry compote over Lemon Panna Cotta. You may add a few more blackberries for texture.
