Raw Chia & Cherry Bars
Similar to our popular protein bars available every day at Palm Court, these slightly sweeter Raw Chia & Cherry Bars make the perfect healthy option to satisfy your sweet tooth. These bars are packed with fiber and protein and use maple syrup instead of refined sugar to retain vitamins, minerals, and many antioxidants. Try these delicious bars at home, they are so simple to make and require no baking. Get creative and replace cherries with dried cranberries or pecans for cashews…options are limitless!
Raw Chia & Cherry Bars
Yield: 32 pieces
Ingredients:
- 2 cups dried bing cherries
- 1 1/3 cups almond butter, all natural
- 1 cup raw pumpkin seeds (pepitas)
- ½ cup chia seeds
- ½ cup maple syrup
- 1 cup shredded coconut
Directions:
- Blend all ingredients in food processor for approximately two mins.
- Line a sheet tray or baking dish with parchment paper and nonstick spray.
- Press mixture into tray evenly.
- Chill for at least two hours. Slice into 32 bars.
