Spiced Ginger Cake

Tis the season for baking! Bring a little sweetness to your next holiday party with this mindfully created spiced ginger cake, You friends and family will rejoice over the balance of sweet and savory in this cake and delight in knowing that it is filled with anti-inflammatory ingredients. Happy Holidays from your Miraval Family!

Ingredients:

  • 3 ½ cups All Purpose Flour
  • 2 tsp Cinnamon
  • 1 tsp Clove
  • 1 tsp Fresh Ground Black Pepper
  • 1 ½ cups Dark Molasses
  • 1 ½ cups Granulated Sugar
  • 1 ½ cups Vegetable Oil
  • ¼ cup Fresh Ginger, Minced
  • 1 Tbsp Baking Soda
  • 1 ½ cups Boiling Water
  • 4 Eggs

Directions:

  1. In a large bowl mix together flour and spices and set aside
  2. In a separate bowl whisk together sugar, ginger, oil and molasses and then mix into flour mixture
  3. Mix together the boiling water and baking soda, then mix into flour/molasses mixture
  4. Whisk in eggs and blend until smooth
  5. Bake at 350 degrees for 20 minutes or until toothpick entered in center comes out clean
