- 7 eggs
- 1/2 cup milk
- 1/2 onion diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 2 tomatoes, diced
- 3 scallions, sliced
- chives for garnish
- 1/4 tsp garlic powder
- salt and pepper to taste
- Preheat oven to 400F, spray a muffin tin, line with silicone muffin liners
- Whisk together eggs and milk, and add the remaining ingredients.
- Fill the muffin tin up 3/4’s of the way, and cook for 22-25 mins, or until a fork comes out clean.
